Banana Podi | Ripe Plantain Fritters

Banana Podi
Banana Podi

Podi/ Pakoda/ Fritters! Call them what you want. We all love them, especially during the monsoons in Mangalore with a hot cuppa of tea. The options are endless and Banana podi is on top of my list.

Although it is known as Banana Podi, it is actually made using the ripe plantain, commonly known as Nendra banana.

How to make Banana Podi

Slice the plantains to the desired lengths, coat it with the batter and deep fry till golden brown. As simple as that! Bite into the golden fried crispy exterior, straight into the sweet mushy goodness inside

Enjoyed best when they are hot. Wash them down with a hot cup of tea!

Ingredients

  • 2 no Ripe plantain (Nendra bananas), large, halved and sliced lengthwise
  • ½ cup All purpose flour
  • 1 tsp Turmeric powder
  • 2-3 tsp Brown sugar, (optional) – see notes
  • 2-3 tsp Rice flour, (optional) – see notes
  • 1 tsp Baking soda
  • Salt, a pinch
  • ½ cup Water, divided
  • Oil, as required, for deep frying

Instructions

Making the Batter:

  • Sift the all purpose flour, turmeric, rice flour (optional),baking soda and salt into a mixing bowl.
  • Mix in the sugar (optional)
  • Add ¼ cup water and mix all the ingredients to form a smooth lump free batter. Use the remaining water only if needed and only as needed. The batter needs to be of thick coating consistency

Making the Fritters:

  • Heat sufficient oil on medium heat for deep frying
  • Dip the banana slices into the batter and coat them well
  • Dip the batter coated banana slices, one by one into the hot oil and fry until they turn light golden brown
  • Remove with a slotted spoon and drain onto a kitchen tissue
  • Serve hot!

Notes

  • The usage of sugar is left to your judgement. If the plantains are well ripened, then sugar isn’t necessarily needed
  • Rice flour is added to crisp up the exterior
  • These fritters are best enjoyed plain along with a cup of chai and they also team up well with basic coconut chutney
  • I would also suggest teaming them with a berry sauce of your choice. My personal favourites being blueberry and raspberry
  • Alternately, do try these fritters with my twist on the classic Banana Split!!
