Ginger-Lemon Syrup

If you are looking to whip-up a quick fresh and spicy summer quencher, which can also flavour your cocktails or top your pancakes or soak up into a vanilla sponge, this Ginger-Lemon Syrup is all you need. It is the usual Simple Syrup infused with the freshness of lemons and the spice and warmth of ginger. Combine it with some ice and sparkling water to enjoy a refreshing Ginger-Lemon Soda.

How to make Ginger-Lemon Syrup

Combine equal parts by volume of water and sugar in a saucepan and simmer it until the sugar is completely dissolved. Take the pan off the heat and add in freshly grated ginger and let it steep in the hot syrup for about 20 minutes. At the end of 20 minutes, stir in some lemon zest and freshly squeezed lemon juice into the saucepan. Using a fine mesh strainer, strain this syrup concentrate into an air-tight jar. Squeeze the pulp in the sieve to extract all the juice. Let the Ginger-Lemon Syrup concentrate cool to room temperature and then transfer to an air-tight jar/ bottle and refrigerate (for upto a week).

Equipment

  • 1 Saucepan
  • 1 Fine-mesh Strainer
  • 1 Air-tight Jar/ Bottle

Ingredients
  

  • 1 cup Water
  • 1 cup Sugar
  • 5 inches Ginger, grated
  • 2 tbsp Lemon zest
  • 2 pc Lemon, juiced

Instructions
 

  • Combine the water and sugar in a saucepan and simmer it until the sugar is completely dissolved
  • Take the pan off the heat and add in the grated ginger (see notes) and let it steep in the hot syrup for about 20 minutes
  • At the end of 20 minutes, stir in the lemon zest and juice (see notes)
  • Using a fine mesh strainer, strain this syrup concentrate into an air-tight jar. Squeeze the pulp in the sieve to extract all the juice
  • Let the concentrate cool to room temperature before storing it in the refrigerator (upto a week)

Notes

  • Vary the quantity of the ginger and lemons as per your taste
