It’s summertime, and the barbecue grills are out in full glory in every neighborhood. Me and my friends were preparing for a grill event of our own, which got me thinking about what else, other than meat and veggies, could go on the grill. Watermelon and pineapples are regulars at a barbecue-grill event, and they taste absolutely amazing when grilled. But what else? I wondered if stone fruits lend well to baking, why not to the grill?

A little online research, and I learned something new: stone fruits can go on the grill and be enjoyed just like that, or they can be turned into some lovely grilled desserts. Grilled-Peaches with Ice-Cream is one such dessert. Seasoned peach halves go on the grill, imparting a smoky flavor as they cook, and the sugars caramelize, intensifying the flavor. These tender, cooked peaches are then served with ice cream and garnished with assorted toppings. Read on to learn how to make my version of this Grilled-Peaches with Ice-Cream dessert.

How to make Grilled-Peaches with Ice-cream

This dessert is perfect for your backyard grill party to make use of the residual heat of the charcoal grills as they cool down after all the heavy-duty grilling is done. However, you can also make this from the confines of your kitchen with the help of a Grill-pan. Begin this Grilled-Peaches with Ice-cream dessert by bringing a grill-pan to medium-high heat. While the pan gets up to temperature, halve the Peaches and pit them. Brush the cut side of the peaches with Coconut Oil and season with salt & pepper.

Once the pan is hot enough, put the peaches on the grill – cut side down, and grill them for about 4 minutes (you should hear a sizzle as the peaches hit the pan). At the end of 4 minutes, flip the peaches (the peaches should have developed grill marks on them) and grill them on the other side for another 4 minutes. The cooking time will vary based on how ripe and juicy the peaches are. Ensure you don’t overcook them and turn them mushy. Once they are cooked nice and tender, take them out to a plate and allow them to cool a bit and prepare to plate the dessert.

For plating, place two halves of the grilled Peach on a Dessert plate. Before you proceed to the next step, ensure that the peaches are at best lukewarm and not hot enough to rapidly melt the ice-cream. Place a scoop of Coconut Ice-cream (of course, Vanilla works perfectly well too) on each half. Drizzle a spoonful of Passion-fruit Reduction on the Ice-cream followed by some crushed Pistachios. Garnish with a teeny-weeny sprig of Mint and some mixed Berries. The Grilled-Peaches with Ice-cream dessert is ready to be served. Enjoy!

Equipment

  • 1 Grill Pan/ Charcoal Grill
  • 1 Silicon brush
  • 1 Ice-cream scoop
  • 4 Dessert Plates

Ingredients
  

For Grilling:

  • 4 Peaches, Ripe, (halved & pitted)
  • 2 tbsp Coconut Oil
  • Sea Salt (as needed)
  • Black Pepper, freshly cracked (as needed)

For Serving:

  • 8 scoops Coconut/ Vanilla Ice-cream
  • 4 tbsp Passion-fruit reduction
  • 2 tbsp Pistachios (crushed)
  • Mint leaves (as needed- for garnish)
  • Mixed berries, (optional)

Instructions
 

Grilling the Peaches:

  • Place two halves of the grilled Peach on a Dessert plate (the peaches should be lukewarm at best and not hot enough to melt the ice-cream rapidly)
  • Place a scoop of Coconut ice-cream (vanilla also works very well) on each half of the Peach
  • Drizzle a spoonful of Passion-fruit Reduction on the Ice-cream followed by crushed Pistachios
  • Garnish with a tiny Mint sprig, some Mixed Berries (optional) and serve!

Notes

  • If you are making this dessert for your backyard grill, you can use the residual heat of your charcoal grill as it cools down, to grill the peaches
  • The cooking time will vary based on how ripe and juicy the peaches are. Ensure you don’t overcook them and turn them mushy
